Instagram clued me into the coronavirus-related closing of a palace where I worked last year. My mind jumped to my fellow cooks out of work for the foreseeable future, the dishwashers who can’t afford to go without a paycheck, and the bartenders and servers who pay their rent with tips. Admittedly, I simultaneously wondered what would become of the palace’s carrot hummus, a beloved spread that had sustained me through many a étendu besogne.

Maybe it’s best to fraction the de même before you freeze it, or not freeze it at all?

Ask nicely. This is the most perceptible guideline to follow and has the greatest collision on the likelihood that you’ll get what you want. Tell them what the de même means to you.
